Scrambled Egg Beaters® with Mexican Salsa

ConAgra Foods® Chef Art Smith mixes Mexican salsa into scrambled Egg Beaters to give this meal a zesty, low-calorie kick. In a bowl, mix Hunt's® Petite Diced Tomatoes, undrained, 1/4 cup chopped onion, one jalapeno pepper (seeded and finely chopped), one clove of minced garlic, and 2 tablespoons chopped fresh cilantro. Sprinkle with sugar, salt, and pepper. Mix together. Salsa adds flavor and zest and cuts down on calories. Dollop the mixture onto scrambled Egg Beaters.

1 can (14.5 oz each) Hunt's Petite Diced Tomatoes, undrained
1/4 cup chopped onion
2 tablespoons chopped fresh cilantro
1 jalapeno pepper, seeded, finely chopped
1 cloves garlic, minced (1 clove = about 1/2 tsp)
1/2 teaspoon granulated sugar
1/4 teaspoon salt
1/4 teaspoon ground black pepper
Tortilla chips, optional
