Tasty Tomato Treats

Whether you consider the tomato a fruit or vegetable, there's no denying its health benefits—especially for your kids. Tomatoes are rich with vitamin C and lycopene, an antioxidant that can help fend off disease. So slip some tomatoes into your kids' diet with these recipe ideas for family favorites with a tomato-style twist.

Cajun Egg Sandwich

What goes better with Saturday-morning cartoons than a hearty breakfast? Instead of serving sugary cereals, whip up a batch of southwest-style scrambled eggs on toasted English muffin halves. Simply cook a cup of smoked sausage in a skillet, then add some onions and garlic until garlic is tender. In a bowl, beat up some Egg Beaters®, milk, black and red pepper and pour into a skillet—add sausage and cook until Egg Beaters are almost set, then stir and cook an additional six minutes. Meanwhile heat some RO*TEL® Original Diced Tomatoes & Green Chilies in a small saucepan over medium heat. When your eggs are done, spoon 1/3 of the mixture over a toasted English muffin half, then top with a tablespoon of tomatoes. Kick it up another notch and serve with hot pepper sauce!

Easy Personal Pizza

These personal pizzas are made with prepared pizza crusts, so keep a bunch in the freezer so your kids can get their fill whenever they desire. Preheat your oven to 450°F. Mix a can of Hunt's® Tomato Sauce and 1/2 teaspoon of Italian seasoning in a small bowl. Spread the tomato sauce mixture evenly on the prepared crusts and sprinkle evenly with cheese and top with pepperoni. Bake in the center of the oven, directly on the rack, for 8 to 10 minutes or until edges of crust are browned and cheese is melted. You can easily substitute any of your family's favorite toppings for the pepperoni.

Queso Potato

Dress up this dinnertime side dish with some creative toppings. Instead of butter, sour cream, and bacon, try an easy queso sauce. Simply combine one 16-oz. package of pasteurized, processed cheese loaf with one 10-oz. can of RO*TEL Original Diced Tomatoes & Green Chilies. Microwave on medium heat for 10 to 12 minutes, or until cheese melts. Cut potatoes in half and top with cheesy tomato mixture.
